- Peel, core, and thinly slice the apples. Spread the slices on a plate and set aside to prevent browning.
- In a large mixing bowl, whisk together the eggs, sugar, and vanilla until the mixture is smooth and slightly frothy.
- Pour in the melted and cooled butter, then whisk until fully incorporated and the mixture is silky.
- Sift the flour, baking powder, and salt into the wet ingredients. Fold gently with a spatula until just combined, avoiding overmixing.
- Carefully fold the sliced apples into the batter, making sure they are evenly distributed without deflating the mixture.
- Pour the batter into the prepared baking pan, spreading evenly with a spatula. Gently tap the pan on the counter to settle the batter and remove air pockets.
