  • 1 cup corn kernels fresh or thawed if frozen
  • 1/2 red onion small finely chopped
  • 1 bell pepper red or yellow deseeded and diced
  • 1/4 cup fresh cilantro chopped
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • 1 teaspoon ground cumin

Method
 

  1. Drain and rinse the black beans thoroughly in a colander, then transfer them to a large mixing bowl.
