Ingredients

  • 2 cups old-fashioned oats preferably rolled oats
  • 1/2 cup honey or maple syrup for a vegetarian option
  • 1/4 cup butter melted
  • 1 cup chocolate chips semi-sweet preferred
  • 1/2 cup brown sugar packed
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Equipment

  • Mixing bowl
  • Baking pan
  • Spatula
  • Measuring cups and spoons

Method

  1. Preheat your oven to 350°F (175°C) and line a baking pan with parchment paper for easy removal.
  2. In a large mixing bowl, combine the oats and brown sugar, stirring to mix evenly.
  3. Pour in the melted butter, honey, and vanilla extract, then stir until the mixture is well coated and sticky.
  4. Fold in the chocolate chips, distributing them evenly throughout the mixture.
  5. Transfer the mixture to the prepared baking pan and press down firmly with the back of a spatula to create an even layer.
  6. Bake in the preheated oven for 15-20 minutes, or until the edges are golden brown and the center is set.
  7. Remove from the oven and let cool in the pan for about 10 minutes, allowing the bars to firm up slightly.
  8. Use a sharp knife to cut into squares or rectangles, revealing the dense, chewy interior dotted with melty chocolate chips.
  9. Allow the bars to cool completely on a wire rack if desired, or serve warm for a gooey, melty treat.

Notes

Store these chewy bars in an airtight container at room temperature for up to a week. For extra flavor, sprinkle a pinch of sea salt on top before baking.
