Method
 

  1. Heat the large heavy-bottomed pot over medium heat and add the olive oil. Once shimmering, add the finely chopped onion and sauté until translucent and fragrant, about 5 minutes. You should see it turn a soft, golden hue.
  2. Add the minced garlic to the pot and cook for about 30 seconds, stirring constantly. The garlic should sizzle gently and release a warm, buttery aroma without burning.
  3. Pour in the warm vegetable broth and bring the mixture to a gentle simmer. Then, add the chopped spinach all at once. Cook for 3-4 minutes until the spinach is wilted and vibrantly green, filling the kitchen with a fresh, earthy aroma.
  4. Remove the pot from heat. Use an immersion blender directly in the pot to blend the mixture until smooth and velvety, or carefully transfer in batches to a blender. Blend until the soup is bright green and creamy, with no lumps remaining.
  5. Return the blended soup to low heat and stir in the heavy cream (or coconut milk). Warm gently for 2 minutes, just until heated through and silky. Do not boil, as this can cause separation.
  6. Season the soup with salt, pepper, and a pinch of freshly grated nutmeg. Taste and adjust the seasoning to enhance the earthy, creamy flavor. The soup should be bright, smooth, and inviting.
