Ingredients
  

  • 1 cup almond butter creamy and smooth, with minimal added sugar
  • 1/4 cup honey golden and fragrant
  • 1 teaspoon vanilla extract optional but recommended
  • 1 1/2 cups old-fashioned rolled oats lightly toasted for extra flavor
  • 1/2 cup shredded coconut unsweetened, toasted if desired
  • pinch sea salt brightens the flavor
  • 1/4 cup chocolate chips mini or chopped dark chocolate, optional

Method
 

  1. In your mixing bowl, stir together the almond butter, honey, and vanilla extract until the mixture is smooth, glossy, and well combined. You’ll notice it becoming slightly sticky and fragrant as you mix.
  2. Add the rolled oats, shredded coconut, and a pinch of sea salt to the bowl. Fold everything together with your spatula until the mixture is cohesive, slightly sticky, and easy to handle.
  3. If you're using chocolate chips, fold them into the mixture now for even distribution. The mixture should be sticky but manageable, with no dry patches.
  4. Scoop out about a tablespoon of the mixture, then roll it between your palms to create a compact ball. Place each ball on your prepared baking sheet lined with parchment paper. Repeat until all the mixture is used, then gently press each ball down to flatten slightly.
  5. Once all the bites are shaped, refrigerate the tray uncovered for at least 30 minutes. This allows the bites to firm up and develop a chewy, satisfying texture.
  6. After chilling, transfer the almond butter bites to an airtight container. Keep them refrigerated and enjoy within a week for the best chewy, nutty experience.

Notes

Feel free to customize with chopped nuts, dried fruits, or a swirl of nut butter. For a vegan version, use dairy-free chocolate or cacao nibs.
