Ingredients

  • 1 cup semi-sweet chocolate chips
  • 2 tbsp unsalted butter
  • 1 tbsp honey
  • 1 cup roasted salted peanuts
  • a pinch sea salt or flaky sea salt for sprinkling on top

Equipment

  • Medium heatproof bowl
  • Silicone spatula
  • Baking sheet with parchment paper

Method

  1. Combine the chocolate chips, butter, and honey in a medium heatproof bowl.
  2. Warm the mixture in the microwave in 30-second bursts, stirring well after each, until smooth and glossy—about 1-2 minutes total.
  3. Add the roasted peanuts to the melted chocolate, stirring gently to coat all the nuts evenly.
  4. Using a spoon or small scoop, drop spoonfuls of the mixture onto a parchment-lined baking sheet, spacing them apart.
  5. Sprinkle a tiny pinch of sea salt or flaky salt on top of each cluster while the chocolate is still soft.
  6. Let the clusters cool and set at room temperature for about 30 minutes, or refrigerate for 15-20 minutes until firm.
  7. Once set, gently lift the clusters from the parchment and store in an airtight container at room temperature or in the fridge.
