Method
 

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or lightly grease it.

  3. In a separate bowl, beat the eggs until they look slightly frothy and pale in color, which takes about 30 seconds to 1 minute.
  4. Add the milk and peanut butter to the eggs, and whisk until the mixture is smooth and creamy. The peanut butter should be fully incorporated, creating a luscious, slightly thick batter.
  5. Pour the wet ingredients into the bowl with the dry ingredients, and gently fold everything together with a spatula or spoon until just combined. Be careful not to overmix; the batter will be thick but should be evenly distributed.
  6. Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full. You can use a ladle or an ice cream scoop for even portions.
