- Place the pineapple chunks, torn mint leaves, honey, and lime juice into a blender.
- Blend on high until the mixture is smooth, vibrant, and slightly frothy, about 30 seconds. You should see a bright yellow liquid with tiny green flecks of mint.
- Pour the blended pineapple mixture evenly into popsicle molds, leaving a small gap at the top for expansion.
- Insert popsicle sticks into the molds, making sure they stand upright and are centered.
- Place the molds in the freezer and let them freeze for at least four hours, or until completely solid.
- Once frozen, remove the popsicles from their molds by running warm water briefly over the outside to loosen them.
- Serve the Pineapple Mint Popsicles in a cozy setting, perhaps on a warm evening or during a picnic, and enjoy their cool, tropical burst of flavor.
Notes
For a more intense mint flavor, add extra leaves. You can also substitute honey with maple syrup for a different sweetness profile.
