Ingredients
  

  • 2 cups ripe pineapple chunks peeled and chopped
  • 1/4 cup fresh mint leaves roughly torn
  • 2 tablespoons honey or agave syrup
  • 1 tablespoon lime juice freshly squeezed

Method
 

  1. Place the pineapple chunks, torn mint leaves, honey, and lime juice into a blender.
  2. Blend on high until the mixture is smooth, vibrant, and slightly frothy, about 30 seconds. You should see a bright yellow liquid with tiny green flecks of mint.
  3. Pour the blended pineapple mixture evenly into popsicle molds, leaving a small gap at the top for expansion.
  4. Insert popsicle sticks into the molds, making sure they stand upright and are centered.
  5. Place the molds in the freezer and let them freeze for at least four hours, or until completely solid.
  6. Once frozen, remove the popsicles from their molds by running warm water briefly over the outside to loosen them.
  7. Serve the Pineapple Mint Popsicles in a cozy setting, perhaps on a warm evening or during a picnic, and enjoy their cool, tropical burst of flavor.

Notes

For a more intense mint flavor, add extra leaves. You can also substitute honey with maple syrup for a different sweetness profile.
