Method
 

  1. Pour the milk into a saucepan and bring it to a gentle simmer over medium heat, watching as tiny bubbles form around the edges and the milk begins to steam.

  3. Add the brown sugar, cinnamon, nutmeg, cloves, and a pinch of salt to the mixture, and stir until the spices are evenly distributed and the sugar dissolves.
  4. Reduce the heat to low and continue cooking, stirring frequently, until the oats are tender and the mixture has thickened to a creamy, porridge-like consistency—about 5 to 7 minutes.
  5. Remove the saucepan from heat and let the oatmeal sit for a minute to settle and slightly cool, which helps it thicken further.
